DELICIOUS AND NUTRITIOUS BANANA BREAD WITH WALNUTS
Ingredients
3 ripe bananas
125g (½ cup) unsalted butter, melted (or swap half for Greek yoghurt for a lighter version)
150g (¾ cup) brown sugar
2 eggs
1 tsp vanilla extract
190g (1½ cups) plain flour – or try 50/50 plain and wholemeal for added fibre
1 tsp baking soda
½ tsp cinnamon (optional)
¼ tsp salt
50g (½ cup) chopped walnuts
Extra walnuts for topping, plus a sprinkle of raw sugar for crunch (optional)
Method
Preheat oven to 175°C fan / 180°C conventional. Grease and line a 20cm round tin with baking paper.
Mash the bananas in a large bowl.
Whisk in the melted butter, sugar, eggs and vanilla until smooth.
Sift in the dry ingredients: flour, baking soda, cinnamon and salt. Fold gently to combine, don’t overmix!
Add the walnuts and stir through.
Pour into your prepared tin. Smooth the surface and sprinkle extra walnuts (and a touch of raw sugar if using) on top for texture and natural sweetness.
Bake for 45–55 minutes, until a skewer inserted into the centre comes out clean. If browning too quickly, loosely cover with foil halfway through.
Cool in tin for 10–15 minutes, then transfer to a wire rack. Serve warm or cooled, it’s perfect on its own or with a smear of nut butter.
