DELICIOUS AND NUTRITIOUS BANANA BREAD WITH WALNUTS

Ingredients

3 ripe bananas
125g (½ cup) unsalted butter, melted (or swap half for Greek yoghurt for a lighter version)
150g (¾ cup) brown sugar
2 eggs
1 tsp vanilla extract
190g (1½ cups) plain flour – or try 50/50 plain and wholemeal for added fibre
1 tsp baking soda
½ tsp cinnamon (optional)
¼ tsp salt
50g (½ cup) chopped walnuts
Extra walnuts for topping, plus a sprinkle of raw sugar for crunch (optional)

Method

  1. Preheat oven to 175°C fan / 180°C conventional. Grease and line a 20cm round tin with baking paper.

  2. Mash the bananas in a large bowl.

  3. Whisk in the melted butter, sugar, eggs and vanilla until smooth.

  4. Sift in the dry ingredients: flour, baking soda, cinnamon and salt. Fold gently to combine, don’t overmix!

  5. Add the walnuts and stir through.

  6. Pour into your prepared tin. Smooth the surface and sprinkle extra walnuts (and a touch of raw sugar if using) on top for texture and natural sweetness.

  7. Bake for 45–55 minutes, until a skewer inserted into the centre comes out clean. If browning too quickly, loosely cover with foil halfway through.

  8. Cool in tin for 10–15 minutes, then transfer to a wire rack. Serve warm or cooled, it’s perfect on its own or with a smear of nut butter.
